Restaurant Carcasse Carcasse is internationally recognized as one of the finest restaurants. The Michelin Guide awarded it one star, and Carcasse, by butcher Hendrik Dierendonck, is the first Belgian establishment to appear on the list of the world’s best steak restaurants.
The restaurant is located in Sint Idesbald, a district of Koksijde. You can reach it on foot or by car in just 1700 meters from Hotel Villa Select.
At Carcasse, Hendrik Dierendonck works nose-to-tail, just as he does in the butcher shop. Nothing goes to waste. The restaurant and the butcher shop are interconnected, and the connection between them has never been closer.
Dierendonck does not simply sell meat. It is meat with a story, which we are eager to share with our guests at Carcasse. Where does it come from, how was it raised and fed? Just like in the butcher shop, everything at Carcasse revolves around craftsmanship, terroir, and passion.
